In the middle of this heat wave I am constantly looking for ways to cool down. I sit in front of the air conditioner, I spend a lot of my time “looking for something” in the freezer and make sure to hydrate. All of those cool-down tricks are great but I have an even better one – and it’s delicious too.
If you’re looking for the perfect (adult) treat for summer, try making boozy popsicles.
I’ve tried two different varieties – mojito popsicles from a Todd English recipe found here and then, my favorites, Ruby Red Pomegranate Margarita Popsicles. A mouthful to say, I know but worth tongue-twisting. These popsicles are sweet and tart at the same time and full of tons of great flavor. Plus, if you bring them to a party, all of the guests will love you!
Ruby Red Pomegranate Margarita Popsicles
(Adapted from Epicurious.com)
3/4 cup sugar
3/4 cup fresh lime juice
3/4 cup Ruby Pomegranate juice blend
2 tablespoons fresh lemon juice
2 tablespoons fresh orange juice
2-3 tablespoons tequila
kosher salt, for garnish
special supplies: popsicle molds -or- 5 ounce cups + popsicle sticks
Combine sugar and juices in a medium bowl. Stir together until sugar dissolves. Add tequila and mix well. Pour into the cups. Freeze for 4 hours or until the pops have started to freeze through. Insert popsicle sticks then return popsicles to freezer overnight. Remove from freezer and run cup under warm water to loosen popsicle if needed. Garnish with kosher salt and serve.
Yield: 4 popsicles if made in molds or about a dozen popsicles if made in cups
If you bring your popsicles to a get-together and they start to melt, no worries, they make delicious slushy shots too!
